My 30th Year

My 30th Year

Today marks the start of my 30th year! I had many cards from the family and some lovely gifts from my other half and his parents. I think I was a little too excited with a Homebase gift card from my sister as it means I can get a few tools for the garden and make a start on decorating the guest bedroom.

The first project will be to paint the ceiling and glossing the woodwork (unless I can get away without doing that) before making a start on painting the walls and putting up some wallpaper.

My second plan is to upcycle a set of bedside tables. I've not yet asked if I can destroy upcycle these yet but I'll hopefully be buying a few paint samples before heading to Homebase.

Opal Necklace from my other half

Looking forward to a great meal later on and spending the weekend with the family!

Cake not so Cakey

Had quite a week and it's only Wednesday! However after getting up early and getting on the bike for 30 minutes before work meant I had some energy to be productive so got work out the way, washing done and baked a cake.

Now it might surprise you that someone can mess up a Victoria Sponge Cake even when following the recipe but technically I didn't as I didn't have the correct ingredients.

225g self raising flour - check
225g caster sugar - had about 50g and added about 170g brown sugar
2 x tablespoons of baking powder - check
4 eggs - check
225g butter - check - well I had to use some Lurpak and some Rowan Glen

Butter lumps

I only have the one cake pan though so I had to bake one and then bake the second. The butter was a bit too hard though so the mixture was quite lumpy and I did an awful job of halving the mixture so the first base may have looked perfect when it came out the oven but it soon deflated and the centre was still gooey so ended up in the bin.

Looks Perfect

The second base however (being much thinner) did cook right though although perhaps left it in a bit too long as the edges were getting a little crunchy. I ended up topping with some jam and dessicated coconut and it does taste delicious. Not quite a traditional Victoria Sponge Cake but it still tastes great with a coffee!
